			<content:encoded><![CDATA[<p>Nothing could be better than the lunch I had last Sunday. Having walked up the Anidri Gorge near to Paleochora, with my sons, we installed ourselves in The Old School House Cafe in Anidri for some much needed fortification before setting off back down the gorge.
<p>Whilst the kids did their thing, my choice for lunch was a plate of the excellent Spetsofai they make there with some fresh crusty bread and washed down with a couple of bottles of cold Mythos. Let me tell you it really hit the spot and, although its considered a winter dish, it makes for a pleasant lunchtime meal at almost any time of year. The following is not their recipe but my best guess. But it works.
<p>To make this properly, you will need to find typical greek village sausages. The smaller, chipolata sized ones tend to work best. If you can&#8217;t find these, use pepperoni suasages or even chipolata sized Lincolnshire sausages.
<p> One kilo (two pounds) Greek village sausages (or pepperoni style sausages)<br /> One tin tomatoes (400 grams, a little less than one pound) or tomato passata<br /> One large onion cut into large slices<br /> Two Garlic cloves, finely chopped<br /> Two big sweet peppers, one red and one green, cut into large slices or chunks<br /> One small chili pepper, finely chopped (optional)<br /> One glass dry red wine<br /> A pinch of oregano or thyme and a bayleaf.<br /> Olive oil<br /> Salt &#038; pepper
<p>Slice the sausages and fry them in a couple of glugs of olive oil a deep frying pan or saucepan. When the suasages are about done, add chopped garlic (and chilli if you want it) and saute for a minute or two &#8211; don&#8217;t let it brown. Add the onion, peppers and chili pepper. Fry gently for a few minutes to soften them. Add tomatoes (or passata&#8230;actually I prefer passata in this), wine and the herbs. Leave to simmer on a very low temperature for about 20 minutes.

<p>In a microwave-safe bowl, or in the top of a double boiler over simmering water, cook chocolate until melted. Stir occasionally until chocolate is smooth. Holding berries by the stem, dip each one in molten Xocai chocolate, about three-quarters of the way to the stem. Place, stem side down, on wire rack and chill in refrigerator until hardened.<br />All the Xocai products are made from natural ingredients, such as unprocessed natural cacao. The chocolate is full of the healthy Omega &#8211; 3 and the Omega &#8211; 6 fat acids, all the essential amino acids, iron, calcium and proteins that are similar to the protein composition that is found in fresh eggs. 			<content:encoded><![CDATA[<p>When stuck in the house during the cold season, why not help your child make this easy and delicious recipe? This is a great way to bond and you can even select some festive tins in which you can take this treat to a Christmas party, Valentine&#8217;s Day party or even give a couple to Grandma for a gift.
<p>This easy recipe is called Glove and Mitten cookies. To make this delightful treat all that is needed is ½ cup sugar, ½ shortening, ½ cup molasses, 2 ½ cups of all-purpose flour, ½ teaspoon ground cloves, 1 teaspoon ground ginger, 1 teaspoon of baking soda, 1 egg and some powdered sugar frosting.
<p>Once you have gathered together all of the ingredients, you will start by beating the shortening in a large mixing bowl using an electric mixer on either high or medium speed for 30 seconds. Now you are going to add the cloves, cinnamon, baking soda, ginger, and sugar and beat this mixture until all the ingredients are well combined.
<p>Next, beat in the egg and molasses until combined. Once that is complete, beat in as much flour that you can, using the mixer on medium speed. Make sure to scrape the sides of the bowl and then stir any left over flour using a wooden spoon. You are now ready to divide the dough into thirds. Once divided, cover and place in the refrigerator for 3 hours or until the dough is easier to handle. While the dough is chilling, trace your child&#8217;s or children&#8217;s hands onto cardboard or heavy paper to create the mitten and glove shapes. Make sure to even the shapes out and then cut them out. Set to the side for now.
<p>After the dough has chilled, roll one-third of it onto a greased cookie sheet at a quarter inch thickness. Your rolling pin should be dusted in flour to prevent sticking. Place the glove and mitten patterns on the dough leaving a three-quarter inch distance between cookies. Cut along the patterns with a knife and remove any excess dough. By doing it this way, instead of rolling the dough on your counter and attempting to move the cut cookies to the sheet, the cookies will retain their shapes. Now bake the cookies at 375 for 8 to 10 minutes or until the cookies have set. Allow the cookies to cool for two minutes. Once they have cooled for a few minutes move them to a rack and allow them to cool completely. Repeat until all the dough has been baked. Now you are ready to make the powdered sugar frosting and decorate.
<p>To make the powdered sugar frosting you will need to stir together in a small mixing bowl 2 tablespoons of milk and 2 cups of sifted powdered sugar. Stir in the rest of the milk 1 teaspoon at a time until the icing is a smooth consistency. Now separate in several portions adding drops of food coloring. If you need a thicker frosting just add a little bit of powdered sugar. If using the hands of more than one child as patterns it is fun to keep their cookies straight by writing their names or initials in icing on their own cookies. This recipe will yield 18 cookies depending on pattern size. Make some cups of hot chocolate and the kids will have a treat perfect for when they come in from playing in the snow and cold.</p>

The concept of &#8220;green living&#8221; covers a lot of things, such as turning down the thermostat, using &#8220;green&#8221; cleaning products, etc., but it definitely includes &#8220;green eating&#8221; too. What you choose to eat makes a BIG difference to our environment. Modern agriculture is very damaging to our planet because of all the pesticides, herbicides and antibiotics that pollute our air, water and soil. Packaging (think plastics!) and long-distance distribution (think gasoline) just make a bad situation worse. Eating local, organic and plant-based foods is an easy way to &#8220;green-up&#8221; your lifestyle-which will help save the planet AND improve your health! It&#8217;s a win-win for the earth and your body.
<p>In the spirit of Earth Day below is the recipe for Slow-Cooker Mexican-Style Vegetarian Stuffed Peppers. These festive looking jumbo stuffed jewels are incredibly easy to make and a perfect way for vegan tempeh to hide out in a medley of south-of-the-border flavors, interesting textures and bright colors.
<p>For whatever reason, stuffed peppers always look so impressive and fun&#8230; at least I think so! They&#8217;re perfect for easygoing entertaining. And, by using the slow cooker you dramatically reduce hands-on cooking time. One stuffed pepper is pretty much a meal by itself, but you could always add a side salad or some vegetable based soup. Enjoy!
<p>Ingredients (Serves 4)
<p>1 tablespoon extra virgin olive oil
<p>4 cloves garlic, minced
<p>1/2 onion, finely chopped
<p>1 (8-ounce) package tempeh (such as Lightlife), crumbled
<p>Unrefined sea salt, to taste
<p>1 teaspoon paprika
<p>2 pinches cayenne pepper
<p>1 teaspoon cumin
<p>1 cup frozen corn kernels, thawed
<p>11/2 cups good-quality, all-natural prepared marinara sauce
<p>1 (4.5-ounce) can chopped green chiles
<p>1/4 cup chopped fresh cilantro
<p>1 (14.5-ounce) can black beans, rinsed and drained
<p>4 red bell peppers, tops removed and seeded
<p>1/2 cup shredded, low-fat organic cheddar cheese
<p>Heat the oil in a large nonstick skillet to medium-high; add garlic and onion, and saute until onion is just tender, about 3-4 minutes. Add the tempeh and saute for 3-4 minutes. Season onion and tempeh with salt to taste. Mix in the paprika, cayenne pepper, cumin, and corn kernels.
<p>In a small bowl, whisk together the marinara sauce and green chiles. Pour the marinara-green chile mixture into the skillet with the tempeh; mix well to combine. Stir in the cilantro and black beans.
<p>Stuff the peppers with the tempeh mixture. Arrange the peppers in a 5- or 6-quart slow cooker. Cover and cook the peppers on high for 2 hours or on low for 4 hours. Remove the lid and top the peppers with the shredded cheese, replace the cover, and cook on high for 15 to 20 additional minutes. Allow peppers to cool 10-15 minutes before serving. Serve warm.

<p>Many times, baking a whole chicken runs the risk of over cooking and dry meat. No one likes that, so why risk it? Slow cook your meals year round and don&#8217;t sacrifice taste or convenience.
<p>Finding slow cooker recipes is great, but did you know that you can cook a whole chicken without a recipe? Sure can. All you do is put the bird in your slow cooker with about a cup or so of water, your favorite seasonings and veggies and let it cook for eight hours. If you need to cook it for ten hours, that&#8217;s ok too. Your poultry will be perfect as is, or for shredding and using in casseroles, chicken chili or bbq sandwiches.
<p>Here are a couple of delicious whole chicken crock pot recipes to try as well:
<p><b>Easy Crock Pot Chicken</b>
<p>1 small onion, sliced<br />4 cloves of garlic, minced<br />3/4 cup soy sauce<br />1/2 cup vinegar<br />1 &#8211; 2-3 lb. whole chicken
<p>In a small bowl combine the onion, garlic, soy sauce and vinegar and mix all together. Place chicken in slow cooker and pour mixture over chicken. Cook on low for 8 to 10 hours.
<p><b>Spicy Slow Cooked Chicken</b>
<p>1 (3 to 3-1/2 lb.) whole chicken<br />1 teaspoon salt<br />1 teaspoon paprika<br />1/2 teaspoon pepper<br />1 teaspoon olive oil<br />1 large onion, sliced<br />1 medium garlic bulb
<p>Rinse chicken; pat dry inside and out with paper towels. In a small bowl, mix salt, paprika, pepper, and oil; mix to form paste. Spread evenly over chicken. Place onion in your slow cooker. Place chicken, breast side up, over onion. Separate garlic into cloves, but don&#8217;t peel cloves. Arrange garlic cloves around chicken. Cover slow cooker and cook on low 8 to 10 hours.</p>
