Have you ever stopped and bought one of those rotisserie chickens they sell at just about every supermarket these days? If you have not yet given them a try, you really should.
They are delicious as a main course just as they are or you can pull the meat off the bones and use the meat in other recipes. In my house, there are just the two of us, so usually, I will have a lot of leftover chicken, and that’s when my one of my favorite quick shredded chicken recipes comes into play.
My particular favorite is Mexican Chicken Chili wraps. All you need to do is take the chicken and shred it or cut it into bite size pieces.
Then, take some chili powder to taste and coat the pieces in the chili powder. Spray some nonstick spray into a skillet, add a can of cut-up tomatoes, and the coated chicken. Add in a can of corn (drained). Let it simmer for a while until the chicken and veggies are hot.
Spoon the mixture into warmed tortillas and wrap them up. If you want to, you can also add some sour cream or some guacamole on top and then wrap up the tortillas.
Another favorite of mine is an old classic: shredded chicken salad.
Simply shred or dice the chicken, cut up about ¾ cups of celery very small, and about ¼ of an onion very small. Mix them together.
Add in some chopped walnuts and/or some cut-up pieces of apple. Mix it all together using mayonnaise, spoon onto some beautiful rolls, top with lettuce, and enjoy.
It is also fun to experiment by adding other ingredients. Some variations include adding thawed but not heated frozen peas, half a can of drained whole kernel corn, or drained dark red kidney beans.

A departure from the usual stuffed sweet bell pepper, the relatively mild Ancho chili pepper, is stuffed with a mixture of sweet potatoes, onion, raisins, brown sugar, roasted garlic puree, ground cinnamon, dried thyme, and toasted pecans.
Ancho chilies are dried when purchased and require rehydration. Place the chilies in a bowl and cover with boiling water. Make sure to go above the chilies, as they will absorb a good deal of the liquid. Allow them to sit in the liquid for about 20 minutes. The chilies need to reach a point where they are soft, but not falling apart. Remove the chilies and rest on paper towels or place in a colander to drain. Using a sharp knife slit the chilies along one side. Remove the seeds and pale colored membrane inside the chili. Leave the stem intact.
The sweet potatoes can be prepared in advance. When ready to cook, wash the sweet potato, remove the ugly ends and peel the outer skin off with a vegetable peeler. Cut into 1 inch chunks, place in a steamer basket, and steam over boiling water for about 10 minutes or until tender. Remove to a colander to drain. The potatoes can alternately be baked in the oven or microwaved.
Ancho Chilies Stuffed With Pecans, Sweet Potato, and Roasted Garlic
Ingredients:
8 Ancho Chilies, softened and prepared for stuffing
1/2 cup Unsalted Butter
1 cup chopped White or Yellow Onion
1-1/2 cup Raisins
1/4 cup Brown Sugar
2 large Sweet Potatoes, peeled and steamed tender
1/4 cup Roasted Garlic Puree (recipe below)
1 teaspoon Ground Cinnamon
2 teaspoons Dried Thyme
1 cup Pecans, toasted and chopped
Coarse Salt
Roasted Garlic Puree:
3 Garlic Heads
1 tablespoon Extra Virgin Olive Oil
Cold Water
Accompaniment:
Sour Cream
Preparation:
1. Preheat the oven to 350 F.
2. Add unsalted butter to sauce pan. Melt over medium heat.
3. Stir in the chopped onions and sauté until softened, about 2 minutes.
4. Stir in the raisins and brown sugar. Continue stirring until the sugar has dissolved.
5. Toss the sweet potatoes in a shallow bowl and using a fork or potato masher, mash the potatoes well.
6. Add the sweet potatoes to the sauce pan.
7. Stir in the roasted garlic puree, ground cinnamon, dried thyme, chopped pecans, and season with coarse salt to taste.
8. Carefully spoon the sweet potato mixture into each Ancho chili pepper.
9. Place the peppers slit-side-up on a greased cookie sheet.
10. Bake 5 to 7 minutes in preheated oven.
Roasted Garlic Puree:
Preparation:
1. Preheat the oven to 350 F.
2. With a very sharp knife slice off the ends of the garlic head away from the hard remaining stem.
3. Slice each whole garlic head in half cross wise, exposing the cloves.
4. Brush the half heads with extra virgin olive oil and arrange the garlic in a baking dish.
5. Add enough water to reach a depth of between 1/4 and 1/2-inch in the baking dish.
6. Cover the dish with foil.
7. Bake 35 to 40 minutes. Remove the garlic from the oven.
8. Allow time to cool. The garlic should be soft and easily squeeze out of the head.
9. Squeeze garlic into small bowl.
10. Use 1/4 cup for the Ancho chili recipe, store the remaining roasted garlic puree in the refrigerator up to 1 week.

There are really two secrets to the perfect pie crust. The first is quality ingredients. The second and most important secret is the temperature of the butter and the water. Butter and water must be very, very cold when making a crust to ensure a flaky, delicious crust.
The recipe below is wonderful for use with pumpkin, coconut, or pecan filling. As a doubled recipe, it works well for a cherry or apple pie. For a 9″ X 13″ pot pie dish, the recipe can be multiplied by 4 to have enough dough for a top and bottom crust. There will even be a little left over to make decorations for the top.
Perfect Pie Crust
1 1/2 cups flour
1/2 tsp. salt
1 stick (1/4 pound) butter, chilled and chopped into small pieces
3 to 4 tbsp. cold water
Grease 9″ pie plate. Sift flour and salt into a mixer bowl. Add butter. Using mixer, mix at slow speed until mixture resembles breadcrumbs. Into one cup water, add two to four ice cubes. Water must be very cold.
Add enough cold water (no more than 4 tbsp.) one spoonful at a time to make a firm dough. Using hands, scrape all dough from bowl and knead into a ball. On lightly floured surface, roll dough out to 1/4 inch thickness. Fold dough in half, then into quarters for easy transfer to the pie plate. Unfold dough onto the pie plate, pressing dough into bottom of pan. Trim excess dough around pie plate edges, leaving enough to cover edge of pan. Using thumb and fingers, pinch edges into an attractive pattern. Refridgerate for 30 minutes before filling. Makes 1 9″ pie crust.
Double for a double crust or lattice crust recipe. For custard and cream cheese type pies, prick bottom of pie crust in an overall pattern to keep crust from bubbling or shrinking. Bake for 10 to 15 minutes at 400 degrees F.
The perfect pie crust is the mark of an excellent cook, and for many cooks is a matter of pride. If you follow the directions precisely, this recipe will give you the perfect crust every time.
