Traveling to Cuba through out these years, I have learned lots of things about Cuban people, Cuban culture and Cuban traditions. Though Cuban coffee is actually not originally from Cuba, for some reason when you think about Cuba, Cuban rum, Cuban cigars and Cuban coffee is the first that comes to your mind. A cup of strong Cuban Coffee early in the morning, after the main meals or late in the afternoon is a deep-rooted tradition in Cuba and it is the first thing Cubans will offer you when you come to visit. Even tourist take back home a pack of Cuban coffee as a souvenir when they travel to Cuba on vacations.
There are many different ways to prepare coffee. You can Cuban eau-de-vie, honey, cinnamon, vanilla, ginger and much more, it all depends on what you like, or what you feel like having. I offer you here 4 delicious Cuba cold coffee recipes I learned from Yansel, the waiter at the Coffee House in Topes de Collantes. Yansel is a young guy who knows a lot about coffee. Black and White

Nigerian bean stew otherwise known as Gbegiri is native to the Yorubas in the South Western part of Nigeria that is not to say that Gbegiri isn’t eaten too by non Yorubas. Gbegiri can be prepared using red meat, white meat or dried fish often referred to as smoked fish which is also combined with red pepper, tomatoes and onion which is liquidised. Below is a list of the ingredients as well as the method of preparation.

Ingredients:

3cups of either red or white beans
2 medium size onion
2 medium size tomatoes
1kg of white meat
4 medium size pepper
3 cooking spoons of palm oil
seasoning (curry, thyme 2 cubes of knorr chicken)
Salt

Method:

Cut the white meat into sizes that can be served, rinse thoroughly and pour in a pot add some water, add one medium size onion cut into cubes and some seasoning and 1 cube of knorr chicken, salt and boil for 40 minutes. The three cups of either red or white bean is first soaked in water for about 30 minutes, this is done to make it easy for the skin to come off. Squeeze the beans between the palms, get a sieve as well as a bowl and place the sieve inside the bowl, pour the water inside the beans into the sieve, then pour back the water in the bowl into the beans. Continue to squeeze and pour the water in the beans back into the sieve placed on top of the bowl this is done until all the skin has come off. Then boil the skinned beans until it becomes soft which should not be more than 40 minutes. Liquidise the onion, tomatoes and pepper. Mash the beans properly then add the liquidised puree, the cooked white meat, the palm oil, seasoning and salt to taste and cook for another 10 minutes. Gbegiri can be eaten with yam, pounded yam, eba, amala, rice or any other food of one’s choosing.

Denizens of many regions of the world must cringe and weep when they taste what passes for authentic versions of local food in modern restaurants, and if I were to throw my chef’s hat into the ring, I might even join in on the cries of “cultural exploitation.” You see, Cajun gourmet cooking is in a class of itself not only in the United States, but in the world as well, and it would be well worth one’s time doing some research now. But my job here is to tell you how to make a genuine Cajun roux, not to be the Leftist Gourmet.

Now, a true Cajun roux is a wondrous thing, and the best part about it is that you only need a dime or two (a marvel in itself in these hard times), a hot stove (a black iron skillet is de rigueur but honestly Teflon works just fine), equal amounts of flour and any sort of vegetable oil that is not strongly flavored (like olive oil or sesame oil), and a not unreasonable amount of virtue, for a Cajun roux demands thirty minutes of your complete attention. No phone calls, no answering the door; if you burn a roux there is no saving it.

OK- here’s how you make it! I like to use one cup of oil to one cup of all-purpose flour- ingredients don’t get easier than that. Heat the oil on medium heat until it’s hot enough for the flour to ‘sizzle’ a bit when added. Once all the flour has been stirred in and the ingredients have consistency, turn the heat to low. Next stir, stir, and stir some more. In fact, don’t stop stirring for the next 30 minutes. You will notice a gradual change as the flour becomes browner and browner and the roux takes on a wonderful fragrance. If you did it right- and the key words here are simple and patient- it will smell toasty and nutty.

Be careful because it is very hot; so let it cool before storing. It will keep practically forever in the fridge so go ahead and make much more than you need.

Beef roast is perhaps one of the most simple dishes to make for your family any time of the year and takes very little effort to do so. The first step to preparing your beef roast is to make sure your beef is properly thawed. To get the best results from the cooking process, you’ll want to make sure the beef is completely thawed. This will allow the beef to be cooked all the way through without any cold, uncooked spots in the middle.

Next, prepare the roast for placing it in the slow cooker. Remove any strings that may be attached and baste the entire roast with a small amount of olive oil or even your favorite marinade. Try not to overdo it because you want to allow the slow cooking process to do the work in the most natural way possible.

Add a small amount of water to the slow cooker to prevent the roast from sticking to the bottom as a result of excessive contact with the hot surface. Place the roast in the center of the slow cooker and then fill in around it with any vegetables that you might want to add. Potatoes, carrots, onions, garlic, celery, and other harder vegetables can all be added at this time. Be sure not to put too many vegetables in the slow cooker, just enough to make a nice base around the roast.

Lightly season the roast with your favorite all purpose seasoning mix or perhaps just salt and pepper and allow the roast to cook for three and a half to four hours on high, and seven to eight hours on a low setting. When there is about 30 to 40 minutes left of the cooking process, add any soft vegetables that you may want to add such as tomatoes or zucchini. Procedure

Clean the anchovies. Discard the head, guts and backbone

the final decoration. Coat a baking sheet with baking paper round
22 cm in diameter and 4cm in height.
Cover the outer edge of the pan with slices of lemon. Start

sprinkle with bread, parsley, parmesan and pecorino. On the

Continue with another layer of bread, cheese, parsley,
oregano, a drizzle of olive oil and the egg’s sbattuto.Continuare

ingredients. Cover the last layer with the chopped egg and rimasto.Cuocere in oven at 200 degrees for 20 minutes (PTO1).
At the same time prepare the fillets kept apart, passing
in flour, egg and chopped. Half fillets and roll them stop
with a toothpick. Fry in hot oil for a few minutes.
Turn out the cake served with fried fillets of fresh parsley
and the citron slices seasoned with a little oil, salt and crushed green olives.

Serves 4
Preparation: 30-35 minutes
Cooking time: 10-15 minutes

INGREDIENTS
300 g of fresh anchovies Cetara
250 g smoked cheese Tramonti
Extra virgin olive oil DOP Colline Salernitane
Oil for frying
Flour
Breadcrumbs q.b.
Chopped parsley
Basil
Sale q.b.

PREPARATION
Clean the anchovies removing heads and entrails. The threads, so remaining will be made to drain and then passed into the flour and then fry them. A finished frying, place them in a ceramic bowl, suitable to go in the oven, the bottom of which was paid a little extra virgin olive oil. Coat the fillets with parsley, coarsely chopped smoked cheese, bread crumbs, basil leaf and a drizzle of olive oil. He then added a new layer of anchovy fillets, which are again covered with provolone, parsley, bread crumbs, basil leaf and a drizzle of olive oil. After completing the layers that can be contained by the bowl, sprinkle with olive oil, provolone and the remaining bread crumbs to form a nice crust on parmesan anchovies. Everything is put in the oven to 200 degrees, turned on earlier and brought to room temperature. Cooking time 10/15 minutes.

A holiday favorite, this is a great pie to serve year round. Start with cooked, mashed and whipped potatoes. The extra step of whipping the potatoes creates a dessert that is smooth and creamy and without lumps. Add sugar, melted butter, eggs, vanilla, salt, ground cinnamon, ground ginger, and whole milk. Stir to combine, spoon into an unbaked pie crust, bake until golden brown, and top with homemade meringue.

Cook’s Notes:
Create mashed sweet potatoes by rinsing potatoes in water, scrubbing with vegetable brush, dicing into 1/2-inch squares and boiling in lightly salted water for 20 minutes or until tender. Drain and add potato squares to large bowl. Using hand mixer, whip potatoes until smooth. Whip the sweet potatoes with an electric mixer. This will produce a smooth creamy pie with no lumps.

Old Fashioned Sweet Potato Pie

Ingredients:

2 cups Cooked, Mashed Sweet Potatoes
1 cup Granulated Sugar
1/2 Stick Butter, melted
2 Large Eggs
1 teaspoon Pure Vanilla Extract
1/4 teaspoon Coarse Salt
1/4 teaspoon Ground Cinnamon
1/4 teaspoon Ground Ginger
1 cup Whole Milk
1 (9-inch) Unbaked Pie Crust

Meringue:
3 Egg Whites
1/4 cup Granulated Sugar

Preparation:

1. Preheat the oven to 350 F.
2. Add mashed sweet potatoes, 1-cup sugar, melted butter, eggs, pure vanilla extract, coarse salt, ground cinnamon, ground ginger to large mixing bowl.
3. Stir to combine.
4. Stir in the whole milk.
5. Place pie crust into glass pie plate.
6. Spoon the mixture into pie crust. Bake 50 minutes.
7. Remove the pie from oven and place on wire rack.
8. Place the pie on a rack and cool to room temperature.

Meringue:
1. Add the egg whites to a mixing bowl and beat until soft peaks form. While beating stir in the sugar one tablespoon at a time.
2. Beat until the sugar dissolves and the meringue is glossy and stiff.
3. Spoon the meringue on to cooled pie with a large rubber spatula.
4. Sprinkle the meringue with a pinch of granulated sugar.
5. Bake for 10 minutes, or until delicately browned.

Meatloaf isn’t always made with the traditional ground beef, it can also be made with low fat ground turkey meat, which cuts down on the calories and the fat. Ground turkey is very versatile and blends well with a variety of spices and vegetables.

This particular turkey meatloaf is packed with onions, mushrooms, broccoli, carrots and green peppers. It’s held together with quick cooking oats and includes seasonings like garlic, poultry seasoning and soy sauce. This loaf can be the centerpiece of any hearty meal.

Here’s how to make this meatloaf:

1 cup of diced yellow onion, 4 ounces of mushrooms that have been chopped, 1 cup of diced broccoli florets, 1/2 cup of diced green bell pepper, 1 cup of grated carrots, 1/4 cup of chopped fresh parsley, 1 garlic clove that’s been minced, 1-1/4 pounds of ground turkey, 3/4 cup of quick cooking oats, 1/4 cup of ketchup, 2 tablespoons of soy sauce, 1 large egg, lightly beaten, 1 teaspoon of poultry seasoning, 3/4 teaspoon of salt, 1/4 teaspoon of black pepper and 1 cup of canned cranberry sauce, drained and sitting at room temperature.

Preheat oven to 350 degrees. Prepare a 9×5-inch loaf pan with cooking spray.

In a medium saucepan, cook, over medium heat, the onions, mushrooms, broccoli, bell pepper and the carrots in salted water. Bring to a boil and cook for an additional 2 minutes. Drain the water from the pan. Transfer the vegetables to a large bowl.

In a large bowl, combine the cooked vegetables, parsley, garlic, ground turkey, quick cooking oats, ketchup, soy sauce, egg, poultry seasoning, salt and pepper.

Place the meatloaf mixture into the prepared pan and press down gently. Bake for 1 hour or until the loaf is nice and firm, and a light brown color. Remove from oven and let it sit for up to 10 minutes.

Transfer the meatloaf to a serving platter and serve with the cranberry sauce.
